We have multiple servers which all use an identical copy of the rewritemap file. Is there some way to have all the servers use the same rewritemap file held at a single location?

Yes, sure it's possible to have mapfile in some shared location.
But we advise to map the folder containing this file to a letter (disk) rather than use UNC paths.

How would I go about doing this. Could you please provide an example of what to put and where. i.e. is it a config file change?

The only change in your config file is the new path to mapfile.
If the mapfile isn't updated frequently, you can do with UNC paths.
But for better monitoring (in case of frequent changes) it's advisable to assign a disk drive letter to the shared folder containing mapfile.
